Lasagne with a Twist

I recently found myself with a glut of courgettes to use up and with a request for lasagne, I decided to get creative and try replacing the traditional pasta sheets with courgette instead. What???!!!!! Purists turn away now. Fussy eaters who don’t like change may click off too but if you are open to the idea of sneaking more veggies into your family’s food, or if you are looking for a speedy version of lasagne
